I love veggies! Seriously, sometimes I live on them, but when I want to add some protein and fat into my diet this soup checks all those boxes. This soup is a low carb soup is delicious whether you are eating keto or just want a tasty soup for winter. Leeks are such a great soup vegetable and the flavor they add is very delicious. This blended soup mixes all the flavors and if you like broccoli you will love this soup.
Low Carb Soup with Broccoli and Leeks –
I served this soup with simple Parmesan crisps.. it was a great combination. Break up the crisps and let them go in the soup. SO yummy! I’ve been working on the pot all week and loving it. Make sure you scroll down to the bottom for the printable low carb soup recipe.
Have you used leeks in soup before? I have memories of my mom making some kind of leek soup when I was growing up, but I don’t know what it was now. I will have to ask her. Roughly chop the leeks {only the white part} I cut the circles and then cut the in half again.
Cook the leeks until soft in the butter and garlic.
Chop the broccoli until all similar sizes. It doesn’t have to be bite size as we will be blending the soup.
Add the cream to the leeks.
Add the broccoli to the cream and leeks and then add the chicken stock on top. The stock should hopefully almost cover the broccoli. Cook the broccoli over low/medium heat until soft.
If you have an immersion blender, just stick it right in the pot and blend. If you are like me and don’t have one of those… the whole pot fits in my blender so I was able to blend it like this.
It’s not a perfectly creamy soup, but it is well blended and my family thought it was pretty tasty! You can top with cheddar cheese for a bit cheesier soup.
Low Carb Broccoli Leek Soup

Ingredients
- broccoli {2 medium heads}
- Leeks {2} chop only white park
- 3 oz salted butter
- 1/2 cup cream {or milk for lower fat}
- 3 cups chicken stock
- salt/pepper to taste
- 1 tsp crushed garlic
Instructions
- Prepare a medium soup pot.
- Roughly chop the white parts of the leeks and put in the pot with the butter.
- Cook leeks until just soft.
- Add cream and chicken stock.
- Chop broccoli heads until all similar size.
- Cover pot and cook broccoli over low/med heat until soft. 8-10 min. Do not let it boil
- Season with salt and pepper to taste
- Use a stick blender or pour soup into a blender and blend until mixed.
- Top with parsley, cream or cheese.
