My mom has been making peanut butter candy at Christmastime for as long as I can remember. When we were growing up we didn’t eat sugar and we looking forward to December when we could eat one of these delicious peanut butter candies each day. And while I let my kids eat sugar in moderation, it’s always nice to have a healthier treat available when the ask for a cookie..

Old Fashioned Peanut Butter Candy

Some also call this an old fashioned peanut butter candy, but for me it’s a candy of the 80’s {haha} Do we call the 80’s old fashioned? Here’s a video showing you really quick how to put it all together…

It only has 2 main ingredients with vanilla as just a small dash, plus nuts if you want. It’s also great without extra nuts, but they add a great texture if you want.

The tricky part is heating the honey just right… you want it hard enough that it will stay in a ball, but not crunchy. On a candy thermometer it should heat to the soft crack stage.. I find this a fine line.

You will need to handle the mixture, so let it cool before rolling into small balls.

I like to add the nuts for extra texture, but it’s good without as well.

Peanut Butter Candy for Christmas

Ingredients

• 1 cup peanut butter
• 1 cp honey
• 1 tsp vanilla
• 1/2 cup peanuts

Instructions

1. Put Honey in pot and cook over Med heat until soft crack on a candy thermometer. Remove from the heat and add peanut butter, the vanilla and nuts. Spray a bowl with oil and place mix to cool. Once cool to the touch roll in to 1" balls and wrap in wax paper. They will keep for several weeks. Our house is cool so I keep them on the counter, but you can refrigerate them if they get soft.

Wrap in wax paper {I tried to find some cute wax paper, but didn’t order in time.
