Slow Cooker Mac and Cheese

I adore homemade mac and cheese… my kids don’t care if it’s made from scratch or out of a box, but I LOVE the real deal. The crunchy top and gooey cheese in the middle, I just love it. This is a mac and cheese my whole family will eat, but with sauteed onions and sharp cheddar, it’s for big kids too!

This was actually the first time I’ve ever made it in the slow cooker. I’ve been making this mac and cheese recipe for years. It’s one that was passed on to my by my Grandpa {papa}. He would spend all day lovingly chopping, cooking, measuring, exacting this recipe. Not sure what he would think of my super easy {don’t really measure} slow cooker version, but the final taste was still amazing.

You can find the recipe for this Slow Cooker Mac and Cheese here. You can follow that recipe to make the traditional baked version or follow these couple modifications to make it in your slow cooker. Now, I am making it in my Instant Pot, but on the slow cooker setting NOT the instant pot setting, so it still took 3 hours. Part of me wants to experiment and see if I can make it in 20 min with the Instant settings.. {hmmm}

For the slow cooker version I prepped all the ingredients as directed in the recipe, but instead of layering in a glass dish, I layered in a greased slow cooker. Pasta, cheeses, onions, salt/pepper, bit of butter, layer, layer, layer… end with a top layer of cheese. Pour in the milk and turned on your slower cooker to Med for 3 hours… Here’s how it looked when I opened the pot after 3 hours.. gorgeous melted cheese and soft noodles all the flavors deliciously blended together. success!
