I love desserts with fruit. Pretty much name a dessert covered in fruit and I love it. Last week I got a great deal on strawberries and blueberries at the local store and I knew right away I wanted to make a fruit tart dessert. This time of year when I’m desperately looking forward to spring a fruit tart seemed in order. Of course I started this project late at night… but I baked up the pastry and made the custard the night before, then put it all together in the morning.
I used my faithful Martha Stewart pastry recipe.
Spring Fruit Tart Pastry
Ingredients
- Martha's Pate Brisee {this what the page says from the magazine that I saved years ago} Recipe by Martha Stewart.
- 2 3/4 all-purpose flour
- 1 tbsp. sugar
- 1 1/2 tsp course salt
- 1 cup cold unsalted {I used salted because I had it on hand and then didn't add the other salt}
- 7 tbsp cold water {more if needed}
Instructions
- combine the dry ingredients in a mixer or with a whisk by hand.
- Add the butter and pulse mixer {or use a fork to break into tiny pieces like I did}
- It should be the consistency of big crumbs when done.
- Add the water and continue to pulse mixer {or stick your hand in and mix it up until a dough forms, like me!}
- Knead once or twice.
- Wrap in plastic wrap and chill one hour or overnight. {can be frozen up to one month}
- Roll out and cut into desired shape. Bake until small patches of browning appear. {bake at 350}
I used a cup to cut out the circles, then put one in the bottom of a muffin liner to bake. Bake and cool.
Next you will need my fabulous custard recipe. I am sorry to say I don’t remember where I found it. Its the cream part of my banana cream pie recipe {another fruit dessert!!}.

Instructions
Add sliced fruit. I used banana, strawberry, blueberry and pineapple. Place on top of your cream filling and enjoy your yummy fruit tart. If you need to transport them it’s best to leave in the muffin liner. I served them to friends and we didn’t need plates. If serving at home, remove from the liners and place on a tray.Yum, super yum!!!
