Okay, I’m going to be honest from the very start… this isn’t a carrot cake recipe…. its a post about dressing up a box carrot cake and making it super festive for Valentines Day! {whew…} So, let me introduce: Valentines Carrot Cake with Cinnamon Chips and Caramel…and Cream Cheese Frosting… {yes, that’s a mouthful!} I love taking a simple box cake and adding a few ingredients to make it extra special… just like we did with this peppermint cake.
Valentines Carrot Cake
Okay, lets take a look at how the box got to that yummy treat!
I mixed up the box as directed, BUT I added these yummy little guys to the mix. Cinnamon Chips… I’ve had these for awhile and just haven’t used them… SO delicious!
I used a silicon heart pan to get the shape, but use whatever heart baking dish you have. Cool the cakes and trim the bottom if needed so it sits flat. I first started with red colored cream cheese frosting.
Cream Cheese Frosting Recipe:
4 oz cream cheese
1 cup powdered sugar
1 tsp vanilla
1 TBS milk
Drip the frosting on to glaze the cake, then drizzle on caramel. Top with Sprinkles and Enjoy!
These little guys were the perfect size for sharing.
I seriously considered just eating cake for lunch… but I stopped with one bite and will save for our dessert tonight.
