Pumpkin Walnut Cookies are my healthy fall treat…I keep seeing fall things around… and while fall seems still FOREVER away.. I guess it’s time to break out the pumpkin! Oh, who am I kidding.. I never really stopped baking with pumpkin {I love it} but I did stop blogging about it! And… I’m back with this tasty whole wheat pumpkin walnut cookie recipe… with some mini chocolate chips for extra yumminess.
Pumpkin Walnut Cookies
The combination of pumpkin, walnuts and chocolate is one of my favorites… and this time I edited a chocolate chip cookie recipe to make it a bit healthier for my family. These cookies have lower sugar and whole wheat flour.
We love using the mini-chips in cookies… so so fun!
These cookies ended up a but puffier than I’d like, but they tasted amazing. My kids ate them right up fresh and over the next few days with the leftovers… My son max loved when I sent them for school snack…
