Pesto Potato Soup Recipe

You NEED to make this pesto potato soup recipe… I’m not joking.. usually I’ll kindly suggest someone try one of my recipes… But not THIS one.. this one you need to make, it’s not really an option. This pesto and potato soup is just that good, it should be a requirement that everyone try it at least once {haha} I’ve been making it for several years, and this season I decided to add kale, which has only made it an even better soup!!

 


My kids like this Pesto Potato soup because it also has some noodles in it. You can use elbow macaroni or small shells. We’ve done both with great success.


Pesto is SOOO versatile. I love how many things you can put it in. I’m still using pesto my mom gave me at the end of last summer. It keeps so well in the freezer.

After you have softened the potatoes, you then cook the noodles right in the soup broth, super easy.

You can use actual cream for a thicker, creamier soup, but I just use broth and milk. Sometimes I use part whole milk for a creamier soup, sometimes I just use low fat milk for all.. It turns out great either way..

I served this soup recently with my easy foccacia bread, which is a great combo, but you can serve with any bread.

Pesto Potato Soup Recipe

Ingredients

  • 3 peeled potatoes
  • 1 onion
  • 1 cup chopped kale
  • 2 TBS butter or olive oil
  • 2.5 cups chicken broth
  • 3/4 cup dry elbow or shell pasta
  • 1 cup milk {low fat or whole}
  • 1 tsp parsley {fresh or dry}
  • 2 TBS pesto
  • Cheese for garnish {optional}

Instructions

  1. Chop the potatoes and dice the onions finely. Place in a soup pot with the butter or oil. Cook on med/high heat for 12 min - stir frequently. Add broth and milk, boil, then lower to a simmer for 10 min. Add pasta and kale, simmer another 10 min. Add parsley, salt and pepper to taste, and the 2 TBS of pesto. If the soup seems too thick you can add a bit more milk.
