I love Reubens… YUM! I don’t eat meat, so I’ve shared before my favorite vegetarian Reuben sandwich recipe, and today I’ve got another great option… Reuben Roll Ups! A yummy and easy appetizer… These can be baked or fries, so you can choose how you want to finish these tasty appetizers.
So I decided to put all my favorite Reuben flavors in a new form… I put Reuben filling in eggroll wrappers, and the result was so so tasty! You can eat these for a meal, or use as an appetizer. Here’s what you will need: Eggroll wrappers, sour kraut {squeeze all the water out}, corned beef, swiss cheese and thousand island dressing.
Separate the wrappers and layer in the beef, sour kraut and cheese. Roll up the wrapper by folding in the sides, then rolling up from the end. Shallow fry in hot oil, or bake at 400F/220C until the outside is browned. If baking spray with a cooking oil before putting in the oven.

When they come out of the oven, drain grease on a paper towel, cool, then dip in Thousand Island dressing. You won’t be sad you made these, the flavors are amazing and so tangy, I love the combination of the sour kraut and cheese, yum!
