Let’s talk about my favorite zucchini muffin recipe… I do love a good dessert, and I certainly indulge occasionally. But, on a daily basis I really like a treat that’s just a “little sweet” and will curb my sweet tooth. Over the summer I made this decadent dark chocolate zucchini cake – and today this edited version is a sorta sweet zucchini muffin recipe, that’s good for every day snacking.

These zucchini muffins are an amazing less sweet version of the original cake and I love both versions.
Okay let’s get to the tasty zucchini muffin recipe – it’s a good one. Made with whole wheat flour, low sugar, applesauce instead of oil and FULL of zucchini – these zucchini muffins still taste like chocolate cake, YUM!
Sorta Sweet Tea and Zucchini Muffin Recipe
Ingredients
- 1 cup unsweetened applesauce
- 1 cup white sugar
- 2 eggs
- 2 cups grated zucchini
- 1 tsp vanilla
- 2 1/2 cups flour { I use 1 1/2 cup whole wheat and 1 cup white mix}
- 1/4 cup dark cocoa powder
- 1 tsp baking soda
- 1/2 cup Buttermilk
Instructions
- Preheat oven to 350
- Cream the applesauce, sugar and vanilla. Add the eggs, beat well. Mix in zucchini. In another bowl, mix flour, cocoa, and baking soda. Add the mixtures together, then mix in the milk {if you don't have buttermilk add 1 tsp lemon juice to regular milk, let sit 5 min} Line muffin tin and spoon to 3/4 full in each cup. Bake 20-25 min. Makes around 2 dozen depending on how full you fill the cups.
