With two boys in school, a 2 year old and my commitments we are a busy on the go family. I need easy breakfast options for my family because this mama isn’t getting up at 5 am to make hot breakfast on school mornings! HA! We do a lot of cereal, and on some mornings when we need even faster we do muffins or granola bars. My kids really like cereal though so I’ve combined cereal and muffins for these tasty and easy Cranberry Almond Crunch Muffins.
Half muffin, half cereal, all yummy!!! Top the muffins with a bit of extra cereal for a great crunch on top.
Great Grains Cereal is a great way to start any day and starting the day right empowers kids to do great things. Making sure my kids have a great start with great food is important to me. When I set the right tone for the day, everything seems to go smoother.
The Cranberry Almond Crunch cereal is such a fun combination of flavors and textures, it made a great muffin!
It took only about 10 min to make these muffins. After you mix the dry ingredients, you add the milk, egg and oil, then put in the muffin tins.
I crushed up another cup of the cereal and sprinkled it on top of the raw muffin batter.

Cranberry Almond Crunch Muffins
Ingredients
- 3/4 C Brown Sugar
- 1 1/3 C whole wheat flour
- 1 C white flour
- 2 C Great Grains Cranberry Almond Crunch Cereal
- 1 tsp vanilla
- 2 TBS baking powder
- 1 tsp cinnamon
- 2 cups milk {low-fat}
- 2 eggs {beaten}
- 1/4 c oil {or applesauce for a healthier option}
Instructions
- Pre-heat oven to 425F or 220C. Makes 24 muffins
- Grease muffin tin or place wrappers in tin. In a mixing bowl stir whole wheat and white flour, sugar, baking powder, cinnamon and the cereal. Add the milk, beaten eggs and the oil {or applesauce} Mix until blended. Place in muffin tin 2/3 full. Sprinkle some crushed cereal on top of each muffin. Bake for 15-20 minutes or until baked through and golden brown on top.
Of course these taste amazing warm with butter {isn’t everything better with butter!} We ate them over the next few days after I made them as well, and they were great later too. Perfect on the go breakfast muffins. I’ve never made cereal muffins like this before, but these cranberry almond crunch muffins may start a new trend for me!
