I don’t make resolutions… it’s just something I’ve never really done. If I want to make changes I try to start them right away, instead of waiting until the new year. I have been reflecting what I’d like to do more of in 2016 though and I thought I would share my list here… It’s a bit random, but I think we can all agree these are things we should do more of this year. I’ve also got a great recipe to share with you using Jif™ Peanut Powder.
- Say Yes… I find my automatic reaction to my kids is no, this year I want to stop and think… I’m sure I can say YES more!
- Feed my kids better snacks {be intentional, plan ahead} meals aren’t the problem, but I get lazy with snacks and just offer something packaged and easy way too much. Last week I made a big batch of whole wheat peanut banana muffins and they were great after school snacks that everyone loved. {success!} With the prep done ahead of time it was a super easy choice too.
- Sleep {although this one isn’t always up to me, yes I can go to bed at a decent time, but my daughter gets me up most nights still, maybe she will start sleeping better this year?!?}
- Connect with new friends {this past year has been a big hard on me socially, a couple close friends moved away and two went back to work, so while I’m never bored, I feel an emotional void from this loss.}
- Tell my kids {and husband too!}how awesome they are {not fake compliments, but find the truly amazing things they do and they tell them how great they are}

Since I mentioned the muffins above, I thought I would share this super yummy recipe with you all.
Have you ever tried Jif™ Peanut Powder? Peanut power is SO easy to use in baking, SO much easier than peanut butter and the flavor is amazing! You and your kids are going to love these Whole Wheat Peanut Banana Muffins! My kids ate them all up and I feel great about these muffins because they are SO good for you! No Sugar, whole grains, peanut powder and bananas, yum!
Jif™ Peanut Powder has the same protein as peanut butter but no added sugar and a lot less fat. It’s made from just ONE ingredient FRESH ROASTED PEANUTS… that’s it!! Great for those who want to eat simple, whole foods!
Okay, let’s get to the tasty recipe!

Whole Wheat Peanut Banana Muffins & Things to do more of in 2016
Ingredients
- 1/3 cup JIF Peanut Powder
- 2 mashed bananas
- {optional} 1/2 cup crushed walnuts
- 2 Cups Whole Wheat flour
- 1 TBS baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 3/4 cup milk
- 2 eggs
- 1/4 cup applesauce or oil
- 1/4 cup honey
Instructions
- Mix the dry ingredients-flour, baking powder, salt, cinnamon and Peanut Powder in a large bowl. In another smaller bowl, mix the wet ingredients - Mashed bananas, milk, eggs, applesauce and honey. Pour the wet ingredients into the dry and stir until just mixed. Add the walnuts if you choose. Put muffin liners in a tin and fill 12 muffin liner to not quiet full. Heat oven to 375F {190C} then bake for around 20 min. A toothpick should come out clean if baked. The bananas will still be soft ;o)
Just out of the oven is the best! Butter melts when they are still warm, so delicious.
A perfect after school snack for my boys! Or breakfast or lunch or bedtime snack… these are good for anytime!

The meal planning and the snack options are something I fall short of too. I really want my son to begin eating healthier options but right now everything to him is “yuck” – he’s almost three and is going through a phase of hating every food. Those muffins look so delicious. I think I’ll have to make a batch of my own and see if he likes them 🙂

I love the idea of saying yes! I think we lose so much at life at not stepping out of our comfort zones and saying yes to things that we mostly wouldn’t do. For me as long as its moral and legal I am going to start saying yes to new experiences.

I’ve never used peanut butter powder before. I have to say my kids are big fans of peanut butter. I’m so glad that they aren’t allergic to peanuts. The muffins you made look so delicious! Thanks for sharing recipe.

Great tips! I love anything with peanut butter I’ve been trying to add the PB powder to any smoothies I make to get that extra protein. My daughter is allergic to peanuts so we try to limit the peanut butter but I love it so much. I think I’ll make a batch of these muffins for the mornings!

I just bought that peanut powder from Walmart and am getting ready to try my hand at baking with it. I’m thinking something with apples, since peanut butter and apples go together so well! Love the picture of the broken open muffin- looks so appealing for breakfast.

I used to be good at meal planning until my hubby’s schedule changed and he worked late. Now he is home early and I’m struggling finding a groove to get back into the swing of things. Those muffins look amazing and I have all the ingredients on hand.

What a great idea! I’ve seen the peanut powder before but I’ve never thought of using it to replace peanut butter in recipes. I’ll be trying this recipe the next time I make banana nut muffins, they look delicious!
