Inside: tasty, delicious and easy Chicken and Tomato Baked Subs.
It’s been a really cool March here. I keep expecting it to warm up a bit, but it’s just been chilly and dreary.. Days like these I want to make warm comfort food for my family. Last week I decided to make some baked subs for dinner and with just a few simple ingredients we had the most amazing chicken and tomato baked subs for dinner. Your family is going to love this simple, quick recipe that is full of flavor.
Tomato and Chicken Baked Subs-
Looks totally tasty, right? These baked subs can be made with ingredients you probably have in your pantry. Grab some fresh bread and get baking.
You can easily bake up enough to feed a whole crowd in just about 30 min. These went over huge at our house and I can almost guarantee you will have the same results.
Here’s what you will need {four servings}: Hunt’s Diced Tomatoes {flavor of your choice} drained, 2 boneless skinless chicken breasts- cut in thin slices, Mozzarella Cheese, 2 TBS Italian seasoning, 1 large French Bread Loaf.
First lay the chicken on a greased baking sheet, sprinkle generously with Italian seasoning. Bake at 375 for about 10 min {or until completely cooked}
Slice the bread into four even lengths. Place thick slices of Mozzarella first, then two heaping spoonfuls of the tomatoes, with the chicken on top. Place on another baking sheet and with the subs open, bake another 7-8 min or until bread is slightly crispy and cheese is melted.
Cut the larger subs in half for a fun party platter…
I love the way the cheese melts and the flavors combine when baked. The chicken stays moist from the juicy tomatoes and the crunchy bread is just the perfect shell for all this goodness.

This is exactly the kind of recipe I rely on during the busy weeks during spring. I often try to make baked sandwiches. I’m sorry you’re having a yucky March in terms of weather, we’ve been having unusually warm weather here in MA.
