I go in streaks of making muffins for quick breakfasts and I recently made these blueberry oatmeal muffins. This berry oat muffin recipe had been buried and I forgot how much we loved these muffins. Full of tasty and healthy ingredients these muffins are a great start to any day.
Healthy Blueberry Oatmeal Muffins
Are your mornings busy? I’ve got three kids at two different schools and start times and our mornings have been a bit hectic… We are slowly getting into a new routine, but I’ve been trying to organize as much as I can the night before and prep easy breakfasts.
This blueberry oatmeal muffin recipe is a favorite of several in my family and I make a double batch to freeze some. Blueberries have been pretty cheap lately so it was time to make this berry muffin recipe.
I LOVE fresh berries in muffins, but my kids don’t always like all the berry juice. You can avoid this with frozen berries… Thaw first, then press on a paper towel to remove the moisture. The blueberry oatmeal muffins will still be soft and delicious, but with not as much juice.
Fresh or frozen the berries should be added last to avoid the whole batter turning purple.. {yes we have had purple/blue muffins before}
The muffin recipe makes 24 muffins.
I added a bit of sugar to the top of the muffins before baking to add a crunchy sweet topping.
Bake for about 20 min until the the tops are just browning for a super tasty and healthy blueberry oatmeal muffin you will love.

Blueberry Oatmeal Muffins
A easy breakfast muffin to make ahead or freeze and eat on busy mornings. Full of tasty, healthy ingredients this berry oat recipe will be a new favorite.
Ingredients
- Brown Sugar 3/4 cup
- Whole Wheat Flour 1 1/3 cups
- White Flour 1 Cup
- Vanilla 1 tsp
- Rolled Oats 2 cups
- Baking Powder 2 TBS
- Cinnamon 1 tsp
- Milk {any kind} 2 cups
- Eggs {beaten} 2
- Vegetable oil 1/4 cup
- Blueberries 2 cups fresh, 1 cup frozen
Instructions
- Grease Muffin Tins or place paper cups in tin.
- Stir together the flour, oats, sugar, baking powder and cinnamon.
- Add the milk, eggs, vanilla and oil, mix until blended.
- Add the berries {fresh or frozen} and don't mix too much. Fold into the batter.
- Bake at 420F {220C} for around 20 min. Depending on how full your cups are, it may be a few minutes less or more..

It gives the amount at the end of ingredients . 2cups fresh berries or 1 cup frozen.

Made them this morning, I was afraid it was too thick at first but filled both of my 12 ct muffin pans .Made 4 with no blueberries ,for those , who always say I don’t like those.They turned out great.I used kefir milk. I did the sugar sprinkles also.Can’t wait for coffee in the morning.Always better the next day. Thank you so much for sharing.

Really good! I might add a little white sugar next time just give them a slightly sweeter taste. Hubby loved them which is always a bonus especially something utilizing whole wheat flour and Oates.
